
The Prost Bramble Recipe
The original bramble was created by the famous London bartender Dick Bradsell in the 1980s.

Ingredients
- .5 ounce Demerara simple syrup*
- .5 ounce lime juice
- 3–4 fresh blackberries**
- 3–4 fresh basil leaves
- 1.5 ounces End of Days gin
- .5 ounce St‑Germain Elderflower Liqueur
- Soda water
Instructions
- Muddle all nonalcoholic ingredients in a cocktail shaker.
- Add the gin and the elderflower liqueur.
- Fill shaker with ice and shake vigorously to chill.
- Strain into a rocks glass filled with fresh ice and top with a splash of soda water. Garnish with fresh basil leaves or mint.
To make the simple syrup
- Put equal parts sugar and filtered water in a saucepan and reduce until it becomes a syrup.
Notes
*Demerara is a region in Guyana where this minimally processed sugar is made from sugar cane. Darker in color and with larger crystals than processed white sugar, it adds a caramel flavor. The sugar can be found in Wilmington at Whole Foods and Walmart. It is also known as turbinado sugar; a good substitute is Sugar in the Raw.
**Pröst also uses fresh local blackberries to make a low-sugar purée, which can be frozen and used in the off season.
