Walnut Taco Meat & Cashew Sour Cream

The taco meat works great raw or heated and is perfect for tacos, dumplings or lasagna. Use this as a base and customize it by adding tomato paste, diced onions, bell peppers or mushrooms. 
Servings 2 cups

Ingredients
  

Walnut Taco Meat

  • Makes 2 cups
  • 2 cups walnut halves or pieces (pecans or a mix will work, too)
  • 2 tablespoons neutral oil
  • 2 tablespoons tamari or soy sauce
  • 2 teaspoons chili powder
  • 2 teaspoons oregano
  • 1 teaspoon garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • Dash of cayenne

Cashew Sour Cream

  • cups cashews, soaked overnight or boiled for 5 minutes, drained and rinsed
  • cups plain unsweetened vegan yogurt *
  • cup lemon juice
  • ¼ cup white vinegar
  • ¼ cup water
  • ½ tablespoon salt
  • Combine all ingredients in a large bowl. Working in batches, blend mixture at high speed in a blender until smooth.
  • * Vegan yogurt can be found at most grocery stores.

Instructions
 

  • For taco meat: In a food processor, pulse all ingredients until the mixture is the texture of ground beef.
  • For the sour cream: Combine all ingredients in a large bowl. Working in batches, blend mixture at high speed in a blender until smooth.
  • * Vegan yogurt can be found at most grocery stores.
