
The best part of this list is “Greens, all of them.” That sounds about right. Greens span the breadth of cuisine in southeastern North Carolina.
Greens include collards, a vegetable in the cabbage family, grown exclusively for its leaves, as is kale. Like kale, collards have hundreds of different colors and places of origin. Georgia Southern or Champion are the varieties most commonly found in supermarkets.
The Utopian Seed Project organized Collard Week to celebrate its place in Southern cuisines of the African diaspora. It’s in December, so get ready.
